These are my dad’s absolute favorite. Something about macadamia nuts cooking activates my peanut-spidey-sense, but once these are cool, even I think they’re irresistible.
Original Recipe from A Hint of Honey
1 cup (2 sticks) unsalted butter, room temperature
1 1/2 cups white sugar
2 tsp. pure vanilla extract
2 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 1/2 cups white chocolate chips
6 oz. macadamia nuts, chopped
1. Preheat oven to 375 F.
2. In a medium bowl, cream the butter and sugar with an electric mixer. Beat in the egg and vanilla. In a separate bowl, whisk to combine the flour, baking soda and salt. Add the flour mixture to the wet ingredients, mixing well. Fold in the white chocolate and nuts. Drop dough by heaping teaspoonfuls onto an ungreased cookie sheet.
3. Bake in preheated oven for 8-10 minutes, until the edges are lightly browned. Cool on wire racks.
Makes 2-3 dozen cookies, depending on size.
