Chicken & Avocado Sandwiches

The first time I made this, I made this with ground chicken. Lesson learned. Do not be like me. Cook your chicken in a spicy lime marinade, then shred it. Then you may proceed to making this sandwich.

Original Recipe from Laughing Spatula

1 lb chicken breast, cooked with lime & hot peppers, shredded
1 large ripe avocado, cut into slices
pico de gallo
queso fresco
ciabatta rolls

  1. Shred chicken.
  2. Spread mayo onto ciabatta rolls.Place shredded chicken on rolls & squeeze lime juice on top.
  3. Top with pico, queso fresco, cilantro, and any other toppings you may choose. Enjoy!
