This recipe comes courtesy of a Hello Fresh meal. While the meal itself was only passable, these carrots were delicious and I will definitely be making them again.
This is our side of choice with quesadillas. And fish tacos. And really anything with an even slightly Mexican-y flair. I mean, cilantro and lime basically are the name. And who doesn’t love roasted sweet potatoes?
Now that I’ve made it successfully, I really can’t decide what was so difficult about getting this right. But obviously something was, because I was unsuccessful at least 10x before this. I’m fairly sure the age of the rice is the biggest factor. I had mostly ignored the advice about using old leftover rice that had been in the fridge when making it before and just attempted it with fresh rice. This time, I had some leftover Thai takeout rice, and it really made the difference.
The first time I made this, I made this with ground chicken. Lesson learned. Do not be like me. Cook your chicken in a spicy lime marinade, then shred it. Then you may proceed to making this sandwich.
Fish tacos are pretty straightforward. They require a tortilla, fish, and slaw. And that’s pretty much it. Which makes them perfect for you.
You’re probably thinking that’s butter on that corn. But you’re wrong. It’s mayonnaise. M-A-Y-O-N-N-A-I-S-E. And believe me, you will like it. Because it basically serves the same purpose as butter, but with lots more flavor. Especially if you like the cracked pepper olive oil mayo, which we obviously do.
It’s worthy of this status.

This was somehow one of Chris’s favorite dishes when we first started dating. He would tell everyone about it, even though I seemed to screw up at least one element every time I made it. Maybe that’s a testament to its deliciousness, that it can be messed up 1,000 different ways and still come out fine.
If you like strawberry cake, you will like strawberry cookies. These are one of the only acceptable uses of fake strawberry flavor. Though these can really be cookies from any kind of cake mix. They’re not picky.
